Dolin is een vermout die nog steeds, sinds 1821, vervaardigd wordt in Chambéry. Chambéry was in lang vervlogen tijden het mekka van de vermoutproductie, er is zelfs een AOC aan toegekend.
Een vermout is een versterkte, met planten, kruiden en specerijen gearomatiseerde, wijn. Dolin wordt nog steeds gemaakt volgens het oorspronkelijke recept door 15 tot 40 planten, kruiden en specerijen (afhankelijk van het type vermout) gedurende verschillende maanden te macereren in een basiswijn (een zo neutraal mogelijke wijn met max. 10 %vol.). Nadien wordt er dan nog suiker toegevoegd en wordt de wijn versterkt met alcohol op basis van wijn tot +/- 16 %vol. Het authentieke proces met het gebruik van natuurlijke producten resulteert in een evenwichtige en complexe vermout, minder zoet dan de meeste van zijn veel bekendere collega’s.

"The first white vermouth was created in Savoie in 1881. Sweet and aromatic, our Vermouth de Chambéry is a favorite for all gourmands and remains a timeless symbol of elegance. It has clear brilliant color and a complex nose with aromas of freshly-picked Alpine botanicals, followed by camphor and then citrus notes. A pleasant harmony of botanical notes develop on the palate in a silky texture. To complete the impression, the aromas of broom and elderflower in this white vermouth give way to notes of fresh almond and peach.
More complex and sweeter than the "Dry", our French white vermouth contains some 32 plants and spices: hibiscus, basil, cinnamon as well as artemesia and gentian from the Alps are just some of them! You can enjoy this Dolin white vermouth on the rocks or add a fruit liqueur in the tradition of the "Chambery-cassis", which was one of Hemmingway's favorites.
