"This is our traditional Vinsanto.
We select the most suited grapes of Trebbiano Toscano and Malvasia del Chianti and we let them dry on wickers for 3 to 4 months.
After the press, the juice is poured in the caratelli, small chestnut barrels from 30 to 100 lt, where there is the mother yeast.
The mother yeast is a selection of the stronger yeasts derived over the years and able to develop a fermentation with a high concentration of sugar. After at least 5 years in the caratelli, the wine reaches a particular equilibrium between alcohol and sugar."
